Advantages of CMC Additives

Many people encounter this problem when making jam: it releases water after two days, and then quickly separates after stirring, with a layer of clear liquid on the surface but a hard, lumpy bottom. This is actually closely related to the acid stability of the thickening system. Sodium carboxymethyl cellulose (CMC) is a water-soluble anionic cellulose ether. Food-grade CMC can maintain high viscosity and steric hindrance in the pH range of 3–7, thanks to the weak binding force between the carboxymethyl groups on the molecular chain and hydrogen ions, thus avoiding "collapse" in the natural fruit acid environment of lemon juice, hawthorn, blueberries, etc. It does not rely on high-temperature gelatinization to work, but is soluble in cold water and can be used immediately, making it particularly friendly for small-batch home preparation.
