L-Arabinose and Sucrose Inhibition
Arabinose, named after gum arabic, is a natural pentose aldose extracted from the gum secreted by the arabic tree through complex chemical and physical methods. Its chemical formula is C5H10O5, and it is also known as L(+)-gum aldose, L(+)-pentose, pectinose, etc.
L-arabinose has eight stereoisomers. Natural L-arabinose is widely found in various foods, but rarely exists as a monosaccharide. It usually exists as a heteropolysaccharide in gums, hemicellulose, pectic acid, bacterial polysaccharides, and certain glycosides, combined with other monosaccharides.
The biggest difference between L-arabinose and other sugar substitutes is that L-arabinose is a natural sugar extracted from plants. When used in combination with sucrose, it can reduce sugar intake while maintaining the taste and physicochemical properties of foods with added sucrose. Currently, foods containing arabinose powder on the market mainly fall into two categories: The first category directly markets high-purity food-grade sweetener L-arabinose in chewable tablet and capsule form, often with added chromium-enriched yeast and bitter melon extract to help control blood sugar.
The second category uses sweetener L-arabinose powder as a food ingredient, replacing sucrose in foods or beverages to mitigate the rise in blood sugar caused by sucrose-containing foods. L-arabinose is commonly used in milk powder, candy, and solid beverages, with application rates of 5.4‰, 6.7‰, and 1.48%, respectively.
